'04 Cabernet Sauvignon

2004 estate-grown Cabernet Sauvignon grapes
harvested at 27.0 brix and finished with 3.82 PH
and 0.57 TA it  contains 15% alcohol. It was cellared
in new 100% East Bernstadt American Oak barrels for
23 months. 346 cases were bottled.  It has a luscious
bouquet of dark rich berries as well as faint floral
scents and a big, rich, toasty caramelized, smoky
oak aroma. The wine offers the familiar fruit forward,
balanced structure of the '03 with hints of leather and
licorice, and it enjoys a perfectly balanced finish. As
with the '03, it can be enjoyed now or cellared for
ten years.
